Ingredients

  • 16 chicken breasts
  • 3 onions, sliced thin
  • 1 bunch scallions, chopped
  • 4 cups beef broth
  • 1 tsp fish sauce
  • 9 Tbsp mirin
  • 9 Tbsp sake
  • 9 Tbsp soy sauce
  • 3 Tbsp sugar
  • 10-12 eggs, beaten
  • cooked rice

Instructions

  1. Trim and slice chicken into thin strips.

  2. Mix together broth, fish sauce, soy sauce, mirin, and sake, and stir in sugar until dissolved. 

  3. In a pan, spread out a layer of onion and pour over that enough sauce to cover it. Add a layer of chicken pieces. 

  4. Bring broth to a boil, lower heat, and simmer until chicken is cooked. 

  5. Drizzle some beaten egg over the chicken, cover, and continue simmering until the egg is cooked but still a bit runny. 

  6. Pour chicken and egg over steamed rice. Top with chopped scallions.
